A summer delight! This delicious and easy recipe combines caramelized pork chops and fresh vegetables in a tortilla. Preparation time is about 30 minutes, and it serves 4-6.Ingredients:
- Sufficient tortillas
- 15 cm slice of leek
- 2 tomatoes (cut into wedges)
- 15 cm slice of cucumber
- Crisp lettuce (e.g., iceberg lettuce)
- 800 g pork loin chops
- 3 dl water
- Splash of soy sauce
- 6 tablespoons brown sugar
- 2 tablespoons butter
- Garlic aioli
- BBQ sauce (e.g., Grill Master Whiskey)
Instructions:
1. Take the pork chops out of the fridge and let them sit at room temperature for about 30 minutes before cooking.
2. If the chops are marinated, wipe off any excess marinade with paper towels. Season the unseasoned chops with salt and pepper.
3. Chop the leek, tomatoes, cucumber, and lettuce into serving bowls.
4. Cook the pork chops in a hot skillet for about 5 minutes, turning them occasionally. Increase the heat and cook until they are nicely browned.
5. Move the chops to a lower heat and prepare the caramelization.
6. Melt the butter in the skillet and add the brown sugar. Stir continuously until the mixture becomes syrupy.
7. Add soy sauce and 2 dl of water. Cook the mixture until it thickens. Add the chops and simmer for another 5 minutes.
8. Quickly grill the tortillas on a hot grill rack.
9. Serve the tortillas with the bowls of chopped vegetables, allowing everyone to assemble their own.
