A delicious and healthy wrap filled with grilled tomatoes, halloumi cheese, and a creamy avocado herb spread. Perfect for a light lunch or dinner!- Preparation Time: 30 minutes

Ingredients:
- 350 g sweet grilling tomatoes
- 1 red onion
- 25 g halloumi cheese
- 65 g organic baby spinach
- 4 soft whole grain tortillas
- 2 avocados
- Juice of ½ to 1 lime
- ½ cup chopped basil
- ½ cup chopped parsley
- ½ cup chopped cilantro
- ½ cup olive oil
- ½ tsp salt
- Black pepper to taste
Instructions:
1. Open the tomato package and rinse the tomatoes still on the vine. Return them to the packaging tray.
2. Peel and slice the red onion, adding it to the tray with the tomatoes. Drizzle with olive oil and seasoning from the tomato package.
3. Grill in an outdoor grill or in the oven at 200 °C (400 °F) for about 15-20 minutes.
4. Gently detach the grilled tomatoes from the vine and discard the stem.
5. Halve the avocados and scoop the flesh into a bowl. Add lime juice, salt, and pepper to taste along with the chopped herbs and olive oil. Mash with a fork until chunky.
6. Cut the halloumi cheese into six pieces. Lightly oil them and grill on both sides until grill marks appear, either on the grill or a grill pan. Cut the pieces in half.
7. Quickly warm the tortillas in a stack on a dry pan or grill, turning until soft.
8. Distribute the grilled tomatoes and onions onto the tortillas. Top each tortilla with 3 pieces of halloumi, a generous amount of spinach, and the avocado herb spread.
9. Roll up the tortillas and enjoy!
