Ingredients:
- 2 slices whole grain bread
- 1 ripe avocado
- 2 eggs
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh cilantro or parsley (optional)
Instructions:
1. Boil the eggs to your desired doneness (about 6-8 minutes).
2. Meanwhile, lightly toast the bread slices.
3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add the lemon juice, salt, and pepper, then mash the avocado into a paste.
4. Spread the avocado mixture on the toasted bread.
5. Peel the boiled eggs and slice them. Place the egg slices on top of the avocado.
6. Garnish with fresh cilantro or parsley before serving.
