Gooseberry Tiramisu

Gooseberry Tiramisu

A refreshing twist on the classic tiramisu, featuring tangy gooseberries. Preparation Time: 30 minutes
Serving Size: 8 servings
Ingredients:
- 300 g fresh gooseberries (cleaned)
- 100 g fresh gooseberries (for garnish)
- 0.5 dl Marsala wine
- 100 g sugar
- 2 dl heavy cream
- 0.5 tsp vanilla extract or powdered vanilla
- 2 tbsp sugar
- 250 g mascarpone cheese
- 2 tbsp Marsala wine
- 12-15 ladyfinger biscuits
- A handful of salted pistachios
Instructions:
1. In a saucepan, combine the 300 g of gooseberries with Marsala and sugar. Bring to a boil until the sugar dissolves and the skins of the berries break. Let the mixture cool.
2. Use a slotted spoon to transfer the berries to another bowl, reserving the syrup for dipping the ladyfingers.
3. In a separate bowl, whip the heavy cream with vanilla and 2 tbsp of sugar until soft peaks form. Gently fold in the mascarpone and 2 tbsp of Marsala.
4. Spoon one-third of the mascarpone mixture into the bottom of a serving dish.
5. Dip the ladyfinger biscuits briefly in the gooseberry syrup on both sides and layer them over the mascarpone mixture.
6. Spread half of the reserved gooseberries over the ladyfingers and add another third of the mascarpone mixture on top.
7. Repeat the layers with the remaining dipped ladyfingers, the rest of the gooseberries, and finish with the remaining mascarpone mixture, smoothing the top.
8. Crush the pistachios and sprinkle them over the top of the tiramisu.
9. Place the dish in the refrigerator to chill for at least four hours, or preferably overnight.
10. Cut the set tiramisu into portions and garnish with whole gooseberries and ladyfingers. Enjoy!
