Ingredients:
- 4 eggs
- 2 dl sugar
- 1 dl all-purpose flour
- 1 dl potato flour
- 1 tsp baking powder
Filling:
- 2 egg yolks
- 2 dl cream
- 1 dl sugar
- Vanilla sugar to taste
Instructions:
1. Preheat the oven to 175°C (350°F) and grease a cake pan.
2. Whisk the eggs and sugar until frothy.
3. In a separate bowl, mix the all-purpose flour, potato flour, and baking powder together. Gently fold the flour mixture into the egg mixture.
4. Pour the batter into the prepared pan and bake in the oven for about 25-30 minutes, until the cake is golden brown and cooked through.
5. Allow the cake to cool.
6. Prepare the filling: whip the cream until stiff and mix in the egg yolks, sugar, and vanilla sugar.
7. Slice the cooled cake in half and fill it with the cream and egg yolk mixture.
8. Optionally, decorate with berries or chocolate.
