Ingredients
- 12 ladyfinger cookies - Filling:
- 1 ½ cups rhubarb pieces
- ⅓ cup water
- 2 tablespoons sugar
- 2 tablespoons dark rum or almond liqueur
- 3.5 oz mascarpone cheese
- ¾ cup heavy whipping cream
- 2 tablespoons sugar (to taste)
- Vanilla sugar (to taste)
Instructions
1. Cook rhubarb pieces in water with sugar for about 5-7 minutes until soft. Let cool. 2. Mix the cooled rhubarb mixture with dark rum or almond liqueur.
3. In a bowl, whip together mascarpone cheese, heavy cream, sugar, and vanilla sugar until fluffy.
4. Quickly dip ladyfinger cookies in the cooked rhubarb mixture, ensuring they don't soak too long.
5. Layer the soaked cookies in a serving dish, then spread a layer of the mascarpone-cream mixture on top.
6. Repeat the layers until all ingredients are used, finishing with a layer of mascarpone-cream.
7. Allow the tiramisu to chill in the refrigerator for at least 2 hours before serving.
