Thai Chicken Salad

A low-fat and high-protein salad that brings the flavors of Thailand to your table. Preparation time: 30 minutes
Serving size: 4
Ingredients:
- 400 g ground chicken
- 1 bell pepper (red or yellow)
- 1 cucumber
- 1 red onion
- 2 dl peas (fresh or frozen)
- 1 dl fresh cilantro
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 1 chili (optional for spiciness)
- Salt and pepper to taste
Instructions:
1. Cook the ground chicken in a pan over medium heat until fully cooked. Season with salt and pepper.
2. Dice the bell pepper, cucumber, and red onion into small pieces.
3. In a bowl, combine the cooked chicken, diced vegetables, peas, and chopped cilantro.
4. Prepare the dressing by mixing together the fish sauce, lime juice, and sugar. If desired, add chopped chili for heat.
5. Pour the dressing over the salad and mix thoroughly.
6. Let the salad chill in the refrigerator for about 10 minutes before serving.
