Ingredients:
- 4 eggs
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Tex-Mex seasoning
- 1 tablespoon butter for frying
- 1 avocado
- 2 tablespoons lime juice
- 2 tablespoons fresh cilantro, chopped
- 1 small tomato, diced
- 1/2 cup shredded cheese (e.g., cheddar)
Instructions:
1. In a bowl, crack the eggs and add the milk, salt, black pepper, and Tex-Mex seasoning. Whisk the ingredients together until well combined.
2. Heat the butter in a skillet over medium heat. Pour the egg mixture into the skillet and cook until the omelet is set.
3. When the omelet is nearly done, sprinkle the shredded cheese on top and allow it to melt.
4. Transfer the omelet to a plate and roll it up.
5. To make the guacamole mousse, mash the avocado in a bowl and mix in lime juice and cilantro until smooth. Add salt to taste if needed.
