Ingredients:
- 8 corn tortillas - 500 g shredded beef (e.g., barbacoa)
- 400 g chili roasted tomato sauce
- 200 g shredded cheese (e.g., cheddar or mozzarella)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Preheat the oven to 180°C (350°F). 2. In a large bowl, mix the shredded beef, cumin, chili powder, salt, and pepper.
3. Quickly warm the tortillas on a skillet or in the microwave until soft and pliable.
4. Fill each tortilla with the shredded beef mixture and roll them tightly.
5. Place the rolled tortillas side by side in a baking dish.
6. Pour the chili roasted tomato sauce over the enchiladas and sprinkle shredded cheese evenly on top.
7. Bake in the oven for about 20-25 minutes, until the cheese is melted and golden brown.
8. Remove from the oven and garnish with fresh cilantro before serving.
