Ingredients:
- 200 g fresh green beans - 2 egg yolks
- 500 g reindeer tenderloin
- 2 dl cranberry red wine sauce
- 400 g beetroot potato mash
- 1 tbsp Dijon mustard
- 20 g butter
- salt
- pepper
- 100 g grouse pâté
- 500 g puff pastry
Instructions:
1. Prepare the beetroot potato mash according to your preferred recipe. 2. Remove the membranes from the reindeer tenderloin and rub the surface with salt, pepper, and Dijon mustard.
3. Heat a frying pan and add the butter. Sear the reindeer tenderloin on both sides until nicely golden brown.
4. Cook the tenderloin to your desired doneness.
5. Boil the fresh green beans in salted water for about 5-7 minutes until they are crisp.
6. On a serving plate, spread the beetroot potato mash and place the seared reindeer tenderloin on top.
7. Drizzle cranberry red wine sauce over the steak and garnish with fresh green beans.
8. Serve with grouse pâté and puff pastry on the side.
