Ingredients:

- 1 tbsp balsamic vinegar
- Zest of 1 lemon
- 1/4 tsp black pepper
- 1/4 tsp white pepper
- 2.5 cups vegetable broth (from cube or stock)
- 1 cup couscous
- 1 tbsp oil
- 1/2 tbsp butter
- 1 tbsp sugar
- 1 cup lemon juice
- 4 cups spinach
- 4 beef tenderloin steaks (150 g each)
- 2 tomatoes
- 1/4 tsp salt
- 2 onions

Instructions:

1. Peel and chop the onions and tomatoes.
2. Heat the oil and butter in a skillet. Add the onions and sauté until they are soft.
3. Add the tomatoes, balsamic vinegar, sugar, and lemon juice. Mix well and let simmer for a few minutes.
4. Season the steaks with black pepper, salt, and white pepper. Cook the steaks in the hot skillet for about 3-4 minutes on each side, or until they reach your desired doneness.
5. Bring the vegetable broth to a boil and add the couscous. Cover the pot and let the couscous steam for about 5 minutes.
6. Stir in the spinach with the couscous and serve the steaks alongside the vegetable mixture.
