A delicious enchilada recipe combining spicy chicken and rich flavors tucked inside tortillas. Perfect for dinner or celebrations!

Ingredients:

- 4 tortillas
- 300 g chicken breast
- 1 onion
- 2 garlic cloves
- 1 tsp cumin
- 1 tsp paprika powder
- 1/2 tsp cayenne pepper
- 200 g shredded cheese
- 400 g tomato sauce
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:

1. Peel and chop the onion and garlic. Heat a skillet over medium heat and add a bit of oil.
2. Add the onion and garlic to the pan and sauté for about 3 minutes.
3. Cut the chicken breast into small pieces and add to the skillet. Cook until the chicken is done.
4. Stir in cumin, paprika, cayenne pepper, salt, and pepper. Mix well and cook for a few more minutes.
5. Remove from heat and add the shredded cheese, mixing until melted.
6. Warm the tortillas separately. Fill each tortilla with the chicken and cheese mixture and roll them up tightly.
7. Place the filled tortillas in a baking dish and pour the tomato sauce over them.
8. Sprinkle additional shredded cheese on top and bake at 180°C (350°F) for about 15 minutes until the cheese is melted and golden.
9. Garnish with fresh cilantro before serving.
