A delicious and spicy Thai salad made with ground chicken, fresh herbs, and a tangy dressing. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g ground chicken
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon toasted rice powder
- 1 red onion, finely chopped
- 2 spring onions, chopped
- 1-2 chilies, finely chopped (to taste)
- Fresh coriander, chopped
- Salt and pepper to taste
Instructions:
1. Cook the ground chicken in a skillet over medium heat until fully cooked.
2. Add the fish sauce, lime juice, and toasted rice powder to the chicken. Mix well.
3. Stir in the red onion, spring onion, and chili. Sauté for a few more minutes until softened.
4. Remove the skillet from heat and add the chopped coriander. Stir to combine.
5. Season with salt and pepper to taste.
6. Serve warm, alongside rice or salad.
