Ingredients:
- 3-4 large potatoes
- 3-4 chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- (Pre-marinated chicken breasts and marinade liquid, if available)
Instructions:
1. Grease a baking dish with olive oil.
2. Peel the potatoes and slice them into about 2-inch thick rounds.
3. Arrange the potato slices in the bottom of the dish, ensuring they cover the base without overlapping.
4. Place the chicken breasts on top of the potatoes.
5. Pour the marinade and a little water into the dish to keep the dish moist.
6. Season with salt and pepper.
7. Bake in the oven at 200°C (400°F) for about 30-40 minutes, until the chicken is cooked and the potatoes are tender.
8. Serve warm.
