Caribbean Chicken Fillets

Preparation Time: 1 hour (including marinating) Serving Size: 4 servings
Ingredients:
- 8 pieces of thin chicken fillets
- 3 tbsp soy sauce
- 3 dl dark beer
- 1 onion, chopped
- 1 tbsp balsamic vinegar
- 2 tbsp apple cider vinegar
- 1 tbsp chicken stock concentrate
- 2 tbsp brown sugar
- 250 g cherry tomatoes
- 1 tsp dried thyme
- Black pepper, to taste
- Fresh coriander, chopped (for garnish)
- Fresh parsley (optional, for garnish)
Instructions:
1. Marinate the chicken fillets in soy sauce, dark beer, chopped onion, balsamic vinegar, and dried thyme for at least 30 minutes.
2. Preheat a grill or frying pan over medium heat.
3. Remove the chicken fillets from the marinade and cook for about 4-5 minutes on each side, until fully cooked.
4. In a saucepan, combine apple cider vinegar, chicken stock concentrate, and brown sugar. Heat until the mixture thickens slightly.
5. Add the cherry tomatoes to the sauce and heat for a few more minutes.
6. Serve the cooked chicken fillets with the sauce, garnished with chopped fresh coriander and parsley if desired.
