Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese, grated
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions.
2. Meanwhile, fry the bacon or pancetta in a pan until golden brown.
3. In a bowl, separate the eggs and add the grated Parmesan cheese. Mix well.
4. Once the pasta is cooked, drain it, saving a bit of the cooking water.
5. Add the hot pasta to the pan with the bacon and mix.
6. Remove the pan from the heat and pour the egg mixture over the pasta, stirring quickly to prevent the eggs from scrambling.
7. If needed, add a little reserved pasta water to achieve a creamy consistency.
8. Season with salt and black pepper to taste. Serve with fresh parsley if desired.
