Ingredients:
- 200 g pulled oats
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp soy sauce
- Fresh basil for garnish
Instructions:
1. Heat the olive oil in a frying pan over medium heat.
2. Add the chopped onion and crushed garlic, sautéing until they are soft.
3. Add the diced bell pepper and sliced zucchini, cooking for about 5 minutes until they start to soften.
4. Stir in the pulled oats and mix well.
5. Add the halved cherry tomatoes, salt, black pepper, and soy sauce. Stir and cook for another 5-7 minutes until all ingredients are heated through and flavors are combined.
6. Remove the pan from heat and garnish with fresh basil before serving.
