Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 2 chicken breast fillets
- 200 g fresh mushrooms (e.g., button mushrooms)
- 1 onion
- 2 garlic cloves
- 200 ml cream
- 100 ml chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to package instructions. Drain and reserve a bit of the cooking water.
2. Chop the chicken, mushrooms, and onion. Mince the garlic.
3. Heat olive oil in a skillet over medium heat. Add the chicken and cook until it is fully cooked. Season with salt and pepper. Remove the chicken from the skillet and keep warm.
4. In the same skillet, add the onion and garlic, and sauté until they are soft. Add the mushrooms and cook for a few more minutes.
5. Pour in the cream and chicken broth, mix well, and let the sauce simmer on low heat for about 5 minutes.
6. Add the pasta and chicken to the sauce, mixing well. If needed, add a bit of reserved cooking water to achieve the desired sauce consistency.
7. Garnish with fresh parsley and serve immediately.
