Ingredients:
- 500 g chicken breast
- 1 onion
- 2 garlic cloves
- 1 tablespoon fresh ginger
- 1 red bell pepper
- 1 can coconut milk (400 ml)
- 2 tablespoons curry powder
- 1 tablespoon oil
- Salt and pepper to taste
- Fresh coriander for garnish (optional)
Instructions:
1. Peel and chop the onion, garlic, and ginger.
2. Heat oil in a large skillet over medium heat. Add onion, garlic, and ginger, and sauté for about 3-4 minutes.
3. Cut the chicken breast into bite-sized pieces and add to the skillet. Cook until the chicken is cooked through and lightly browned.
4. Stir in the curry powder and mix well to coat the chicken evenly.
5. Add the diced bell pepper and coconut milk. Stir and let simmer on low heat for about 10 minutes.
6. Season with salt and pepper to taste. Serve with rice or naan bread. Garnish with fresh coriander if desired.
