Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 400 g chicken breast fillets
- 2 tablespoons olive oil
- 1 onion
- 2 garlic cloves
- 200 ml cream
- 100 g Parmesan cheese (grated)
- 150 g cherry tomatoes
- 100 g spinach
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, and sauté until soft and translucent.
3. Cut chicken breast fillets into strips and add to the skillet. Brown the chicken evenly.
4. Add cherry tomatoes and spinach to the skillet. Cook for a few minutes until the tomatoes soften and the spinach wilts.
5. Pour cream into the skillet and mix well. Allow to simmer for a few minutes until the sauce thickens slightly.
6. Stir the cooked pasta into the sauce. Add grated Parmesan cheese and mix until the cheese melts.
7. Season with salt and pepper to taste. Serve with fresh basil on top.
