This delicious and spicy vegetable pasta is the perfect meal for busy days. It's both nutritious and full of flavor, taking little time to prepare.

Ingredients:

- 300 g pasta (e.g., penne or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, diced
- 200 g cherry tomatoes, halved
- 1 tsp chili powder (or to taste)
- 1 tsp dried oregano
- Salt and pepper to taste
- 100 g fresh spinach
- Grated Parmesan cheese for serving (optional)

Instructions:

1. Cook the pasta according to the package instructions in salted water. Drain and reserve some pasta water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and diced bell pepper. Cook for about 3-4 minutes.
4. Stir in the zucchini and cherry tomatoes. Season with chili powder, oregano, salt, and pepper. Cook for about 5-7 minutes until the vegetables are tender.
5. Toss the cooked pasta with the vegetables. Add a little reserved pasta water if needed to keep the mixture moist.
6. Stir in the fresh spinach and mix until just wilted.
7. Serve immediately with grated Parmesan cheese, if desired.
