A light and filling dish that combines whole wheat pasta with a delicious hot tomato salsa. Perfect for a weekday meal! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g whole wheat pasta - 400 g canned tomatoes
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 chili (optional)
- 1 tsp paprika powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh basil (for garnish)
- Grated Parmesan cheese (for serving)
Instructions:
1. Cook the whole wheat pasta according to package instructions in salted water. 2. Peel and chop the onion and garlic. Dice the bell pepper and chop the chili, if using.
3. Heat olive oil in a pan over medium heat. Add the onion and garlic, sauté for about 3-4 minutes.
4. Add the bell pepper and chili to the pan, cook for a few more minutes.
5. Stir in the canned tomatoes, paprika powder, salt, and pepper. Let the sauce simmer on low heat for about 10 minutes.
6. Once the pasta is cooked, drain it and mix it with the hot salsa.
7. Serve the dishes topped with fresh basil and grated Parmesan cheese.
