Ingredients:
- 4 egg whites- 250 g sugar
- 1 tsp cornstarch
- 1 tsp vanilla sugar
- 300 ml cream
- 2 tbsp powdered sugar
- 200 g fresh berries (e.g. strawberries, raspberries, blueberries)
- Mint leaves for garnish (optional)
Instructions:
1. Preheat the oven to 120°C (248°F). Line a baking tray with parchment paper.2. Whisk the egg whites until stiff peaks form. Gradually add the sugar until the mixture is glossy and firm.
3. Gently fold the cornstarch and vanilla sugar into the egg white mixture.
4. Spread the meringue onto the parchment paper in an even round layer.
5. Bake in the oven for about 1 hour, until the meringue is dry and crisp. Let it cool.
6. Whip the cream and powdered sugar together until fluffy.
7. Spread the whipped cream over the cooled meringue layer and top with fresh berries.
8. Cut the cake into serving pieces and serve.
