A delightful meringue cake that combines sweetness and crunch with fresh and moist elements, perfect for summer celebrations or weekend treats! Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 4 eggs
- 2 dl sugar
- 2 dl potato flour
- 1 tsp baking powder
- 100 g melted butter
- 2 dl whipped cream
- 3 dl fresh berries (e.g., strawberries, raspberries, or blueberries)
- Powdered sugar for decoration
Instructions:
1. Preheat the oven to 175°C (350°F). Line two round cake pans with parchment paper.
2. Separate the eggs and beat the egg whites until stiff peaks form. Gradually add the sugar while continuing to beat until the mixture is glossy and firm.
3. Add the egg yolks one at a time, folding gently after each addition.
4. Combine the potato flour and baking powder, then gently fold it into the batter.
5. Add the melted butter and mix until smooth.
6. Divide the batter between the two prepared pans and bake in the oven for about 25-30 minutes, or until the cakes are golden brown and cooked through.
7. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
8. Whip the cream until it forms soft peaks and gently fold in the berries.
9. Place one meringue layer on a serving plate, spread the berry mixture on top, and cover with the second meringue layer.
10. Dust with powdered sugar and add extra berries for garnish, if desired.
