Strawberry Brita Cake

A summer treat that combines a sweet berry cake with whipped cream. This Brita cake is perfect for celebrations or summer days. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 4 eggs
- 1.5 dl sugar
- 1 dl all-purpose flour
- 1 tsp baking powder
- 100 g butter (melted)
- 2 dl heavy cream
- 2 tbsp sugar (for sweetening the whipped cream)
- 300 g fresh strawberries (sliced)
- Fresh mint leaves (for garnish)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a round cake pan.
2. In a mixing bowl, whisk the eggs and sugar until pale and fluffy.
3. In another bowl, combine the flour and baking powder, then gently fold it into the egg-sugar mixture.
4. Pour the melted butter into the batter and mix well.
5. Pour the batter into the prepared cake pan and bake for about 25-30 minutes, or until the cake is golden brown and cooked through. Allow to cool.
6. In a separate bowl, whip the heavy cream and add the sugar. Continue whipping until stiff peaks form.
7. Once the cake has cooled, slice it in half horizontally. Spread whipped cream on the bottom layer and top with sliced strawberries.
8. Place the second layer of cake on top and decorate with remaining whipped cream and strawberries. Garnish with mint leaves.
9. Let the cake chill in the refrigerator for about an hour before serving.
