Crispy and delicious Brita cakes that delight with their flavor and texture. A perfect dessert or treat for a coffee table.
Preparation Time: 1 hour
Serving Size: 12 cakes
Ingredients:
- 1 dl almond flakes or chopped almonds
- 1.5 dl all-purpose flour
- A splash of lemon juice
- 2 egg yolks
- 125 g soft butter or margarine
- 2 tsp baking powder
- 1 dl sugar
- 1 tsp vanilla sugar
- 2 egg whites
- Whipped cream flavored with vanilla, jam, or berries
Instructions:
1. Beat the egg whites with sugar and vanilla sugar until stiff peaks form. Add a splash of lemon juice.
2. Cream the soft butter or margarine with egg yolks and sugar. Mix in the almond flakes, flour, and baking powder.
3. Gently fold the egg white mixture into the batter.
4. Spread the batter onto a baking sheet lined with parchment paper and bake at 175°C (350°F) for about 25-30 minutes, until the top is beautifully golden brown.
5. Allow to cool and serve with vanilla whipped cream, jam, or berries.
