A delicious and moist cake that combines garden berries with a crispy base. Perfect for celebrations or as a sweet treat at home.
Preparation Time: 1.5 hours
Serving Size: 12-14 pieces

Ingredients:

- 200 g butter
- 2 dl sugar
- 4 eggs
- 4 dl all-purpose flour
- 2 tsp baking powder
- 1 dl milk
- 1 tsp vanilla sugar
- 3 dl raspberries
- 2 dl black currants
- 2 dl rhubarb (chopped)
- 2 dl whipped cream

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Beat the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, combine the all-purpose flour and baking powder. Gradually add the flour mixture to the butter mixture, alternating with the milk. Stir in the vanilla sugar until smooth.
4. Pour the batter into the prepared cake pan and smooth the top.
5. Sprinkle the berries and rhubarb evenly over the batter.
6. Bake in the oven for about 30-40 minutes, or until the cake is cooked through. Check for doneness with a toothpick.
7. Allow the cake to cool before serving. Serve with whipped cream.
