Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Peel and finely chop the garlic cloves. Cut the bacon into strips.
3. Heat a skillet over medium heat and add the bacon. Cook until crispy.
4. Add the chopped garlic to the bacon and sauté for another minute.
5. In a bowl, crack the eggs and mix in the grated Parmesan cheese until well combined.
6. Drain the cooked pasta (reserve some cooking water) and add it to the skillet with the bacon and garlic. Toss to combine.
7. Remove the skillet from heat and quickly add the egg mixture, stirring to ensure the eggs cook from the residual heat without scrambling. Add reserved pasta water as needed for a creamy sauce.
8. Season with salt and black pepper to taste. Serve immediately, garnished with fresh parsley if desired.
