A delightful dessert featuring a tart gooseberry filling layered between crisp meringues and whipped cream.

Ingredients:

- 300 g gooseberries
- 150 g sugar
- 3 egg whites
- 200 g icing sugar
- 200 g cream
- 1 tsp vanilla sugar
- 1 tbsp lemon juice

Instructions:

1. Rinse the gooseberries and remove the stems. Cook the gooseberries in a saucepan with sugar until softened. Blend the mixture until smooth and let it cool.
2. Prepare the meringue: Whip the egg whites until stiff peaks form, gradually adding icing sugar while continuing to whisk until the mixture is glossy and firm.
3. Spread the meringue mixture onto parchment paper in two circular shapes and bake at 100°C (212°F) for about 1.5 hours, or until the meringues are dry and crisp.
4. Whip the cream with vanilla sugar and lemon juice until peaks form.
5. Assemble the cake: Place one meringue layer on a serving platter, spread the gooseberry puree on top, then add a layer of whipped cream. Top with the second meringue layer.
6. Optionally, decorate with additional gooseberries and serve immediately.
