Ingredients:
- 400 g chicken fillets - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g rice
- 600 ml chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 100 g fresh spinach leaves
- 50 g grated Parmesan cheese
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and crushed garlic, sauté until soft.2. Add chicken fillets to the skillet and cook until golden brown and cooked through. Remove chicken from the skillet and set aside.
3. Add diced bell pepper to the skillet and sauté for a few minutes until softened.
4. Stir in the rice and mix well until it becomes translucent.
5. Pour the chicken broth into the skillet, then season with salt, black pepper, and oregano. Stir and bring to a boil.
6. Once boiling, reduce heat and cover the skillet. Let it simmer for about 20 minutes until the rice is cooked and the liquid is absorbed.
7. Add the cooked chicken, spinach, and grated Parmesan cheese to the skillet. Mix well and heat for a few more minutes.
8. Serve immediately and enjoy!
