Ingredients:
- 400 g chicken breast fillets - 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes
- 1 dl fresh herbs (e.g., basil and parsley)
- 1 dl balsamic vinegar
- 150 g feta cheese, crumbled
Instructions:
1. Heat olive oil in a skillet over medium heat. 2. Season the chicken breast fillets with salt, black pepper, and crushed garlic.
3. Cook the chicken in the skillet for about 5-7 minutes on each side until cooked through.
4. Add the diced red bell pepper and sliced zucchini to the skillet. Cook for another 5 minutes until the vegetables are tender.
5. Add the cherry tomatoes and balsamic vinegar to the skillet. Mix well and cook for a few more minutes.
6. Remove the skillet from heat and add the crumbled feta cheese and fresh herbs. Gently mix.
7. Serve immediately while warm.
