Serving Size: 4 tacos
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Lime wedges for serving
Instructions:
1. In a medium bowl, mash the chickpeas slightly with a fork.
2. Heat olive oil in a skillet over medium heat.
3. Add the chickpeas to the skillet along with cumin, paprika, cayenne, salt, and pepper.
4. Cook for about 5-7 minutes, stirring often, until the chickpeas are heated through and well combined with the spices.
5. Warm the corn tortillas in a separate skillet or microwave.
6. Assemble the tacos by placing a portion of the chickpea mixture on each tortilla.
7. Top with shredded lettuce, diced tomatoes, chopped cilantro, and avocado slices.
8. Serve with lime wedges on the side.
