Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
1. In a skillet, heat olive oil over medium heat.
2. Add the chickpeas to the skillet and season with chili powder, cumin, paprika, garlic powder, salt, and pepper.
3. Cook for about 5-7 minutes, stirring occasionally, until the chickpeas are heated through and slightly crispy.
4. Warm the tortillas in a separate pan or microwave until pliable.
5. Assemble the tacos by placing a portion of the spicy chickpeas on each tortilla.
6. Top with shredded lettuce, diced tomatoes, red onion, and sliced avocado.
7. Garnish with fresh cilantro and serve with lime wedges on the side.
