Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, and avocado.
2. In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Sprinkle the chopped cilantro on top and give it one last gentle toss.
5. Serve immediately or refrigerate for up to 1 hour to let the flavors meld.
