Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and bell pepper.
2. In a small bowl, whisk together the olive oil, lemon juice, smoked paprika, cayenne pepper, salt, and pepper.
3. Pour the dressing over the salad and toss everything gently until well combined.
4. Let the salad sit for about 5 minutes to allow the flavors to meld.
