Serving Size: 4 servings
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed - 1 red bell pepper, diced
- 1 cucumber, diced
- 1 small red onion, finely chopped
- 1 avocado, diced
- 1 jalapeño, seeded and minced
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. In a large bowl, combine chickpeas, red bell pepper, cucumber, red onion, avocado, and jalapeño. 2. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Garnish with fresh cilantro before serving.
5. Serve immediately or refrigerate for up to 30 minutes to allow flavors to meld.
