A flavorful and aromatic beef stew, perfect for a cozy dinner. Slow-cooked to tender perfection.

Ingredients:
- 1.5 kg boneless beef chuck
- 3 pieces (3 cm each) ginger
- 4 garlic cloves
- 3-4 onions
- 1 tbsp red or Panang curry paste
- 1 can (80g) tomato paste
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 3 tbsp fish sauce
- 3 tbsp dark syrup
- Cooking oil
- 3-4 cups water (plus more as needed during cooking)
- For serving: fresh Thai basil, mint, and cilantro
Instructions:
1. Cube the beef chuck. Chop the onions and slice the garlic and ginger.
2. In a bowl, mix together the tomato paste, curry paste, soy sauce, rice vinegar, fish sauce, and dark syrup. Gradually add water while stirring to combine.
3. Place the beef, onions, garlic, and ginger in a Dutch oven or a deep baking dish. Pour the spice mixture over the top and toss to combine. The liquid should mostly cover the beef; add more water if necessary.
4. Cover and slow-cook in a 120°C (250°F) oven for 10 hours. Add more water as needed and cover with a lid if the liquid reduces too much.
5. Before serving, generously sprinkle fresh Thai basil, mint, and cilantro on top.
