Spaghetti Aglio e Olio

Spaghetti Aglio e Olio
recipe
A quick and simple Italian pasta dish featuring garlic and olive oil. Preparation Time: 20 minutes
Serving Size: 2
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti. 2. In a large skillet, heat the olive oil over medium heat.
3. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden and fragrant, about 2 minutes. Be careful not to burn the garlic.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil.
5. If the pasta seems dry, add a bit of the reserved pasta water until the desired consistency is reached.
6. Season with salt to taste and garnish with chopped parsley.
7. Serve immediately, with grated Parmesan cheese if desired.
