Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with garlic, olive oil, and red pepper flakes. Quick and simple, perfect for a weeknight dinner.Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of boiling salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic is golden, about 2 minutes, being careful not to burn it.
3. Add the red pepper flakes and cook for an additional 30 seconds.
4. Toss the drained spaghetti into the skillet, adding some reserved pasta water to help combine the sauce. Stir well to coat the spaghetti with the garlic oil.
5. Season with salt to taste and remove from heat.
6. Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
