Spaghetti Aglio e Olio

A simple and classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- Spaghetti (200g)
- Extra virgin olive oil (4 tablespoons)
- Garlic (4 cloves, thinly sliced)
- Red chili flakes (1 teaspoon)
- Fresh parsley (a handful, chopped)
- Salt (to taste)
- Parmesan cheese (for serving, optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat olive oil over medium heat. Add sliced garlic and sauté until golden brown, being careful not to burn it.
3. Add red chili flakes and sauté for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to combine. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
5. Remove from heat and stir in chopped parsley. Season with salt to taste.
6. Serve immediately, topped with grated Parmesan cheese if desired.
