Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and garlic. Sauté until the garlic is golden brown, about 2-3 minutes, being careful not to burn it.
3. Add the red pepper flakes and sauté for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until you reach desired consistency.
5. Season with salt to taste and toss in chopped parsley.
6. Serve immediately, topped with grated Parmesan if desired.
