Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and red pepper flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 6 tablespoons extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti according to package instructions in salted boiling water until al dente. Reserve 1/2 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2 minutes.
3. Add the red pepper flakes and sauté for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil.
5. If the pasta seems dry, add a little reserved pasta water to achieve the desired consistency.
6. Season with salt to taste and toss in the chopped parsley.
7. Serve hot, topped with grated Parmesan cheese if desired.
