Spaghetti Aglio e Olio

Ingredients:
- 400g spaghetti- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Once the garlic is golden, add the red pepper flakes and sauté for an additional 30 seconds.
4. Reserve 1 cup of pasta cooking water, then drain the spaghetti.
5. Add the drained spaghetti to the skillet with the garlic oil. Toss to combine, adding reserved pasta water a little at a time to create a light sauce.
6. Season with salt to taste and garnish with chopped parsley.
7. Serve immediately, topped with grated Parmesan cheese if desired.
