Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat.
3. Add the sliced garlic and cook until it becomes golden brown, about 2 minutes. Be careful not to burn it.
4. Stir in the red pepper flakes and cook for an additional 30 seconds.
5. Add the drained spaghetti to the skillet, tossing to coat in the garlic oil.
6. If the pasta seems dry, gradually add reserved pasta water until desired consistency is reached.
7. Season with salt to taste and toss in chopped parsley.
8. Serve immediately with grated Parmesan cheese on top if desired.
