Spaghetti Aglio e Olio

A classic Italian pasta dish featuring garlic and olive oil. Preparation time: 20 minutes
Serving size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil. Once hot, add the sliced garlic and sauté for 2-3 minutes until golden and fragrant, being careful not to burn it.
3. Add the red pepper flakes to the skillet and stir for about 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to combine with the garlic oil. If the pasta seems dry, add a little reserved pasta water until desired consistency is reached.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve hot, topped with grated Parmesan cheese if desired.
