Spaghetti Aglio e Olio

Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red pepper flakes
- Fresh parsley, chopped (for garnish)
- Salt (to taste)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2 minutes.
3. Add the red pepper flakes to the skillet and stir for another 30 seconds.
4. Add the drained spaghetti to the skillet and toss to coat in the oil and garlic mixture. If the pasta seems dry, add a little reserved pasta water to achieve the desired consistency.
5. Season with salt to taste and toss in the chopped parsley.
6. Serve immediately, topped with grated Parmesan cheese if desired.
