Spaghetti Aglio e Olio
recipe

A classic Italian pasta dish made with garlic, olive oil, and chili flakes. Perfect for a quick weeknight meal.
Preparation Time: 15 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red pepper flakes
- Salt to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
2. While the pasta is cooking, heat the olive oil in a large pan over medium heat.
3. Add the sliced garlic to the pan and sauté until golden brown, being careful not to burn it.
4. Stir in the red pepper flakes and cook for an additional 30 seconds.
5. Once the spaghetti is cooked, reserve about 1/2 cup of the pasta water and then drain the rest.
6. Add the drained spaghetti to the pan with the garlic oil, tossing to coat. If the pasta seems dry, add a little reserved pasta water.
7. Season with salt to taste and garnish with fresh parsley.
8. Serve hot, topped with grated Parmesan cheese if desired.
