Spaghetti Aglio e Olio

A classic Italian pasta dish made with garlic, olive oil, and red pepper flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, about 2-3 minutes. Be careful not to burn the garlic.
3. Add the red pepper flakes to the skillet and stir for about 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to combine with the garlic and oil. If the pasta seems dry, add a bit of the reserved pasta water.
5. Season with salt to taste and continue to toss until everything is well coated.
6. Remove from heat, garnish with chopped parsley, and serve immediately. Top with grated Parmesan cheese if desired.
