Spaghetti Aglio e Olio

Serving Size: 4 servings
Ingredients:
- 400g spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1/4 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Cook until the garlic is golden, being careful not to burn it, about 2-3 minutes.
3. Add the red pepper flakes and cook for an additional 30 seconds.
4. Toss the cooked spaghetti into the skillet with the garlic oil. Add reserved pasta water a little at a time as needed to create a light sauce. Stir well to coat the pasta.
5. Season with salt to taste and garnish with chopped parsley.
6. Serve immediately, with grated Parmesan cheese if desired.
