Spaghetti Aglio e Olio

A quick and delicious Italian pasta dish made with garlic and olive oil. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves of garlic, thinly sliced
- 60ml extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
2. In a large skillet over medium heat, add the olive oil and sliced garlic. Sauté until the garlic is golden and fragrant, about 2-3 minutes.
3. Add the red pepper flakes and cook for another minute.
4. Add the drained spaghetti to the skillet, tossing to coat the pasta in the garlic oil. If the pasta seems dry, add a little reserved pasta water.
5. Season with salt to taste.
6. Remove from heat, garnish with fresh parsley, and serve with grated Parmesan cheese if desired.
